Our favourite: Quinoa-Stuffed Mini Peppers

Ingredients:

1 cup quinoa, cooked
12 mini bell peppers, assorted colors
1 cup black beans, cooked
1 cup cherry tomatoes, diced
1/2 cup red onion, finely chopped
1/4 cup fresh cilantro, chopped
1 teaspoon cumin
Juice of 2 limes
Salt and pepper to taste

Instructions:

1. Preheat the oven to 375°F (190°C).
2. Cut the tops off the mini peppers and remove the seeds.
3. In a large bowl, mix together the cooked quinoa, black beans, cherry tomatoes, red onion, cilantro, lime juice, cumin, salt, and pepper.
4. Stuff each mini pepper with the quinoa mixture.
5. Place the stuffed peppers on a baking sheet and bake for 15-20 minutes or until the peppers are tender.

Salt and pepper to taste
1 pound baby potatoes, halved
1 pound asparagus, trimmed
1 tablespoon balsamic glaze

Instructions:

1. Preheat the oven to 400°F (200°C).
2. Place the salmon fillets on a baking sheet lined with parchment paper.
3. Drizzle the salmon with olive oil and sprinkle with dill, parsley, thyme, salt, and pepper.

Instructions:

2. Repeat the layers until the glasses are filled, ending with a dollop of Greek yogurt on top.
